Our home is divided! Half say pee-can, the other half puh-kahn. Since Derek is from Georgia, I will never be able to get him to say pecan how I grow up saying it. I will still love him anyways. I’m sure he feels the same.
Whether you pronounce it pee-can or puh-kahn, this dessert is a must try.
The first time I ever heard of a Pake (Pie and Cake), was when watching Drop Dead Diva. I honestly thought it was a weird combination.
I have to admit I cheated a little when I made this dessert. I bought a store bought pie crust.
You can either make the pecan pie or used a store bought one.
Here is the recipe I used:
1 c Brown Sugar
3/4 c Corn Syrup
1/3 c Butter
1/2 tsp Salt
3 Eggs
1 1/2 c Halved Pecan
1 Frozen Deep Pie Crust
Mix all the ingredients except pecans and crust in a bowl. Make sure they are well mixed. Add the pecans. Pour Batter into frozen pie crust.
Bake for 35-45 minutes or until center of pie is set at 350 degrees. Cover edge of pie crust with foil to help prevent any more browning to edges. And cook for about 15-20 minutes. Cool pie before placing in fridge. Chill for 2 hours before serving.
1 Chocolate Cake boxed mix
Prepare it according to the directions.
Pour about half of cake batter into a spring-form pan. I like to line it with wax or parchment paper to for easy pie. Place the pie into the pan. Make sure you remove the pie pan. Then pour remaining batter over pie.
Cook at 350 degrees for 45-60 minutes or until you can lightly push on center and it spring back.
Let the Pake cool.
Top the Pake with ganache.
Ganache:
1/2 c Heavy Whipping cream
1 c Semi Sweet Chocolate Chips
In a small pot heat the heavy whipping cream over medium heat until it starts to steam. Add the chocolate chips. Stir until the mixture is well blended and smooth. Cool the ganache slightly before pouring over the Pake.
Add some extra pecans on top for decoration.
I saw this pake being made but don’t know remember where I saw the idea. However this is the recipe I came up with to copy the out come.
